Ingredients

  • 425 grams 1 lb whole peeled tomatoes canned

  • 1 1 onion, finely chopped

  • 1 1 garlic clove, crushed

  • 0.5 teaspoon 1/2 tsp dried oregano

  • 1 teaspoon 1 dried basil

  • 1/2 teaspoon 1/2 salt

Directions

  • Place the tomatoes, onion, garlic, basil, oregano and salt into a large saucepan.
  • Break up the tomatoes with a wooden spoon. Bring to a gentle simmer over medium heat.
  • Cook for about 15 minutes, stirring occasionally, until the sauce has reduced and thickened.
  • Allow the sauce to cool slightly before spreading over pizza bases.
  • Add your preferred toppings and bake according to your pizza recipe until the base is crisp and the cheese is golden.

Original Cookbook Recipe

PIZZA TOPPING

INGREDIENTS:

1 by 425g tomatoes
1 finely chopped onion
1 clove crushed garlic
1 teasp dried basil
1 half teasp oregano and salt

METHOD:

Place all ingredients into saucepan. Break up tomatoes and simmer approx. 15 mins until tomatoes have reduced to a thick paste. Cool. Use on a scone or pizza base and top with cheese, olives and anchovies, or whatever desired. Bake approx 20 mins in mod oven.
