Created as a Brookie Pantry original, it is lightly sweetened with honey or maple syrup, warmed with cinnamon and vanilla, then baked until golden. Serve with yoghurt, milk, fruit or as a crunchy topping for smoothie bowls.

Rachael’s Granola Muesli is a simple make-ahead breakfast mix with toasted oats, nuts, seeds, coconut and dried fruit.

Ingredients

  • 3 cup rolled oats (Use traditional rolled oats, not instant oats.)

  • 1 cup raw nuts, such as almonds, pecans or walnuts, roughly chopped

  • 1/2 cup mixed seeds, such as sunflower seeds, pumpkin seeds or chia seeds

  • 1/2 cup shredded coconut

  • 1 tsp ground cinnamon

  • 1/4 cup honey

  • 1/4 cup coconut oil

  • 1/2 tsp vanilla extract

  • Pinch of salt

  • 1/2 cup dried fruit, such as raisins, cranberries, chopped dates or chopped apricots

Directions

  • Preheat oven to 160°C fan-forced. Line a large baking tray with baking paper.
  • Combine the oats, nuts, seeds, coconut, cinnamon and salt in a large bowl.
  • Warm the honey or maple syrup with the oil until melted and easy to stir. Stir in the vanilla. Pour over the dry ingredients and mix until evenly coated.
  • Spread in a thin layer on the prepared tray.
  • Bake for 20–25 minutes, stirring once halfway, until lightly golden and fragrant.
  • Remove from the oven and cool completely on the tray.
  • Stir through the dried fruit – its important to do this after baking so that the fruit does not burn.
  • Store in an airtight container – I use airtight jars but anything will do.

  • Contains tree nuts and seeds. Not suitable for nut-free lunchboxes or childcare settings.
