Pizza Toast Fingers

Buttered bread, cheese, bacon and a savoury tomato mixture make Jeannie’s Pizza Toast Fingers a wonderfully retro party snack. Contributed to the Tully Family Cookbook, the recipe turns simple pantry and fridge ingredients into crisp baked toast fingers with a cheesy topping and chopped bacon scattered over the top. It is practical, nostalgic and ideal for sharing, especially as part of an afternoon tea, high tea platter, children’s party table or casual family gathering. The use of curry powder gives it that distinctive old-fashioned Australian savoury flavour.

  • 2 tablespoons 2 tbsp tomato sauce

  • 2 teaspoons 2 tsp Worcestershire sauce

  • 2 teaspoons 2 tsp curry powder

  • 1 1 egg

  • 8 8 slices bread, crusts removed and buttered

  • 250 g 8 5/6 oz bacon, finely chopped

Directions

  • Preheat oven to 180°C.
  • Combine the grated cheese, onion, tomato sauce, Worcestershire sauce, curry powder, egg, salt and pepper in a bowl.
  • Mix until well combined.
  • Spread the mixture over the buttered bread slices.
  • Place in the fridge for about 10 minutes.
  • Sprinkle the finely chopped bacon over the top.
  • Cut the bread into fingers.
  • Arrange the fingers on a baking tray.
  • Bake for about 20 minutes, or until golden and cooked through. Serve warm.

Kitchen Notes

  • “Black sauce” has been modernised as Worcestershire sauce for contemporary Australian home cooks. Use white sandwich bread for the closest old-fashioned result. Serve warm as party food, afternoon tea or a savoury high tea item.
  • Contains wheat, dairy and egg.
