Salmon Impossible Pie
Salmon Impossible Pie is a simple savoury bake made from eggs, milk, flour, cheese, onion and herbs. Robyn Tully contributed this easy family recipe to the Tully Family Cookbook, where it appears as a practical one-dish meal that can be mixed together quickly and baked until firm in the centre. With no pastry to roll and only everyday ingredients, it works well for lunch, brunch, a light dinner or a share plate with salad. The salmon gives it a savoury flavour while the cheese and eggs make it hearty enough to serve warm or cold.

IMPOSSIBLE PIE
INGREDIENTS:
4 eggs
half cup butter
2 cups milk
half cup plain flour
half cup grated cheese
150 g salmo
nonion chopped
herbs (parsley)
salt and pepper
METHOD:
Combine all ingredients. Pour into a 250mm greased pie plate. Bake at 180 degrees C for 1 hour or until centre is firm.
