Ingredients
1 small ripe avocado
1 rasher bacon, cooked until crisp and finely chopped
2 teaspoons finely chopped onion
1 small tomato, peeled, seeded and finely chopped
1 tablespoon mayonnaise
Salt, to taste
Freshly ground black pepper, to taste
Paprika, for seasoning
Directions
- Mash the avocado in a medium bowl until mostly smooth.
- Add the chopped bacon, onion, tomato and mayonnaise.
- Mix gently until evenly combined.
- Season with salt, pepper and a light sprinkle of paprika to taste.
- Serve immediately with crackers, corn chips or fresh vegetable sticks.
Kitchen Notes
- Best served fresh, as avocado naturally discolours over time.
- Contains egg.
Contains bacon (not suitable for vegetarians).
May not be suitable for lunchboxes due to the egg content in some mayo – use an egg free mayo if you would like though it may change the taste.
