Cheese Relish
Fresh breadcrumbs, milk, cheese and egg come together in Jeannie’s Cheese Relish, a simple savoury spread from the Tully Family Cookbook. The breadcrumbs are soaked first, then mixed with melted cheese, butter, seasoning and herbs before being cooked briefly until thickened. It is an old-fashioned recipe with a wonderfully practical feel, the sort of thing that could be served warm with toast, crackers or savoury biscuits. Its soft, cheesy texture also makes it a good fit for afternoon tea, high tea platters or relaxed entertaining.

CHEESE RELISH
Soak a cup fresh white breadcrumbs in cup of milk for half hour. Melt a cup grated cheese with 1 tablesp melted butter in saucepan (or microwave). Add soaked breadcrumbs, little salt and pepper and chopped parsley or chives. Mix well, add beaten egg. Cook briefly till thickened.
