A hearty spaghetti sauce made with Italian sausages, tomatoes, mushrooms, red wine, herbs and your choice of pepperoni, ham or bacon.

Ingredients

  • Olive oil, for frying

  • Onions, chopped

  • G arlic, chopped

  • Fresh chillies, chopped

  • C hopped pepperoni, ham or bacon

  • Italian sausages

  • Can ned tomatoes

  • Dried oregano

  • Red wine

  • Mixed herbs

  • Salt and pepper, to season

  • Mushrooms, chopped

  • Spaghetti

Directions

  • Heat a little olive oil in a large saucepan or frying pan.
  • Add the onions, garlic and fresh chillies and fry until softened and fragrant.
  • Add the chopped pepperoni, ham or bacon and cook briefly.
  • Place the Italian sausages in boiling water until firm enough to slice.
  • Cut the sausages into 2.5 cm pieces. Drain the saucepan to use again for spaghetti later.
  • Add the canned tomatoes, oregano, red wine and mixed herbs to the pan.
  • Season to taste.
  • Add the sliced Italian sausages and plenty of chopped mushrooms.
  • Simmer for 15–20 minutes, or until the sausages are cooked through and the sauce has thickened slightly.
  • Cook spaghetti in a saucepan of boiling water and drain when al dente, mix a little olive oil through the spaghetti to stop it from sticking.
  • Serve warm over spaghetti.

SPAGHETTI SAUCE

Fry in olive oil – onions, garlic, fresh chillies. Add chopped pepperoni,ham or bacon. Set Italian sausages in boiling water and cut into 1inchpieces. Add canned tomatoes, oregano, red wine, mixed herbs – season. Combine sausages add lots of chopped mushrooms and cook 15 -20 mins.
