Beef mince, sausage mince, onion, egg and rice are shaped into a loaf, then baked slowly in a warm tomato sauce until tender and easy to slice. Contributed to the Tully Family Cookbook, it is simple, economical and designed to feed a family well. The original recipe also notes that cooked meatloaf can be frozen for up to two months, making it a handy make-ahead dinner for busy weeks.

Tomato Rice Meatloaf is an old-fashioned family dinner made with beef mince, sausage mince, rice and a warm tomato sauce.

Ingredients

  • 500 g topside beef mince

  • 250 g sausage mince

  • 1 egg, beaten

  • 1 small onion, finely chopped

  • ½ cup uncooked long-grain rice

  • 440 g canned tomato sauce or passata

  • 1 tablespoon white vinegar

  • 2 teaspoons Worcestershire sauce

  • Plain flour, for shaping

Directions

  • Preheat oven to 180°C.
  • Lightly grease the base and sides of a 15 x 25 cm loaf pan.
  • Combine the beef mince, sausage mince, beaten egg, onion and rice in a large bowl.
  • Mix well until evenly combined.
  • With lightly floured hands, shape the mixture into a rounded log.
  • Place the meatloaf into the prepared pan.
  • Combine the tomato sauce or passata, white vinegar and Worcestershire sauce in a saucepan.
  • Stir over low heat until warm.
  • Pour the warm tomato sauce mixture over the meatloaf.
  • Cover the pan tightly with foil.
  • Bake for 1 hour 45 minutes, or until the meatloaf is cooked through and the rice is tender.
  • Remove the meatloaf from the pan.
  • Strain the tomato sauce and skim off any fat.
  • Serve the meatloaf sliced with the strained tomato sauce.

Kitchen Notes

  • Contains wheat if using regular sausage mince and flour. Check sausage mince ingredients if required.

TOMATO RICE MEATFOAF

Cooked meatloaf can be frozen up to 2 months

INGREDIENTS:

500g topside minced beef
250g sausage mince
1 beaten egg
1 tablesp white vinegar
half cup rice long grain
44g can tomato sauce
1 small onion finely chopped
2 teasp black sauce

METHOD:Lightly grease base and sides of 15 x 25 cm loaf pan. Combine minces,egg, onion and rice in large bowl. Mix well. With lightly floured hands, formmixture into rounded log shape. Place in prepared pan. Combine remainingingredients in saucepan. Stir over low heat till warm. Pour over meatloaf.Cover tightly with foil and bake in moderate oven 1hr 45mins, or microwaveon medium 30 mins. Remove meatloaf from pan, strain tomato sauce. Skimoff any fat. Serve sliced with strained tomato sauce. Serves 6.
