A hearty spaghetti sauce made with Italian sausages, tomatoes, mushrooms, red wine, herbs and your choice of pepperoni, ham or bacon.

Ingredients

  • Olive oil, for frying

  • Onions, chopped

  • Garlic, chopped

  • Fresh chillies, chopped

  • Chopped pepperoni, ham or bacon

  • Italian sausages

  • Canned tomatoes

  • Dried oregano

  • Red wine

  • Mixed herbs

  • Salt and pepper, to season

  • Mushrooms, chopped

  • Cooked spaghetti, to serve

Directions

  • Heat a little olive oil in a large saucepan or frying pan.
  • Add the onions, garlic and fresh chillies and fry until softened and fragrant.
  • Add the chopped pepperoni, ham or bacon and cook briefly.
  • Place the Italian sausages in boiling water until firm enough to slice.
  • Cut the sausages into 2.5 cm pieces.
  • Add the canned tomatoes, oregano, red wine and mixed herbs to the pan.
  • Season to taste.
  • Add the sliced Italian sausages and plenty of chopped mushrooms.
  • Simmer for 15–20 minutes, or until the sausages are cooked through and the sauce has thickened slightly.
  • Serve hot over cooked spaghetti.
