Tomato Rice Meatloaf
Grandma Gen Tully’s Tomato Rice Meatloaf is the kind of practical family dinner that feels straight from a well-used kitchen notebook. Beef mince, sausage mince, onion, egg and rice are shaped into a loaf, then baked slowly in a warm tomato sauce until tender and easy to slice. Contributed to the Tully Family Cookbook, it is simple, economical and designed to feed a family well. The original recipe also notes that cooked meatloaf can be frozen for up to two months, making it a handy make-ahead dinner for busy weeks.
